Eggless Achu  Murukku/Rose Cookies |Step by Step Pictures | Festive  Recipe ( with a small video)

This is one of recipe which will definitely be in the list for Xmas sweets in our native(kanyakumari Dist.).This is a sweet crispy murukku sometimes called as achappam. My MIL has different shapes of achus with her.Last month when i went for my grocery shopping i grab one achu/mold for me.

I know that we cannot make murukku with the new one,but have to cast it .The old methods of keeps it in rice water may sometime work but its takes more days.I googled and got idea for easy casting it. Wipe the mold with oil,wrap in aluminium foil and bake it for 1&1\2 hrs at 180deg C.But we have to think about electric charges too ,so whenever i bake in my OTG i kept the mold in the lower rack of it and my mold got ready to make murukku after 4 bakes.

Ingredients:


  • Raw Rice flour- 1 cup
  • Maida/flour- 1\4 cup
  • Powdered sugar-1\2 cup
  • Coconut milk- 3\4 to 1 cup
  • Salt a pinch
  • Oil for frying

Method:

1.In a mixing bowl add raw rice flour,sugar,maida ,salt and mix.Slowly add coconut milk and make dosa batter consistency.

2.The consistency is very very important if its too watery the batter won't stick to mold,if too thick u won't get crispy murukku. Adjust water/coconut milk according to it.



3.Heat oil in kadai and keep the mold it in for a while.



4. Immediately dip the mold in the batter, a hissing sound will come,.Just dip it 3\4 on not to the brim of the mold.



5.Place the mold/achu with batter on the hot oil,the batter stucked in the mold will be released automatically. If needed use a fork/knife to remove.


6.Fry on both sides and drain it on paper towel.Repeat for all the batter.




But keep in mind everytime u have keep the mold in hot oil before dipping it into the batter.Else the murukku won't stuck into the mold.


Cool and store it in an airtight container.


Notes:

1.The batter is very important,if it becomes thick dilute it and if thin add flour.first check one murukku and add then flour/coconut milk to the batter.

2. Keep some extra flour as u may need it for mixing.
